Stollen (Fruit Loaf)


  • 500 grammes of flour
  • 1 package baking powde
  • 200 grammes of sugar
  • 1 package vanilla sugar
  • some salt
  • 1 bottle of rum aroma
  • some bitter almond and lemon
  • 2 eggs
  • 125 grammes of butter
  • 250 grammes of curd
  • 250 grammes of raisins
  • 125 grammes of ground almonds or hazelnuts
  • 40 grammes of candied lemon peel

In order to coat:

  • 50 grammes of butter

In order to strew:

  • 50 grammes of powdered sugar


Flour and baking powder mix and on a baking board seven. In the middle a deepening is pushed. You put  sugar, spices and eggs into the hole and make with a part of the flour  a thick dough. On the dough you give the cold fat cut in pieces, the raisins, the ground hazelnuts and the candied lemon peel. You crush everything to a dumpling and knead from the middle all ingredients fast to a smooth dough. The dough is formed to a fruit loaf and is laid on a baking sheet occupied with pan liner. In the oven at about 180 degrees of hot air middle rail, baking time about 90 minutes. Straight away after the baking one coats the fruit loaf with melted fat and dusts him with powered sugar.
